Pizza Nativa uses stones ground flour , which is rich in fibre and adds strenght to the dough . The dough is matured @ 4 degrees Celsius for days. Water is added to the dough making it light , crisp and easy to digest.
Mix rations are high hydration ( up to 90% ) . The perfect combination of flour , salt , water and oil within the dough is what makes the " BIGA " . This is the Italian word which refers to the overall "magical ingredients" that create the perfect pizza.
